STUFFED CAPSICUM
Preparation Time: 10 minutes
Cooking time: 30 min approx..
Preheat oven to 180 degrees C fan forced
Ingredients
- 4-5 large capsicums cut in half
- 1 brown onion finely chopped (if you stomach doesn’t upset by them)
- 1 zucchini finely chopped
- 2 carrots finely chopped
- A hand full of green beans finely chopped
- 2 cloves of garlic
- 500g minced beef
- 1 tsp chicken stock (massel)
- 1 tsp Himalayan crystal salt
- 1 tablespoon middle eastern spice mix
- Pepper to taste
- Rind from 1 lemon
- Greek yoghurt and coriander to put on top after it has been served
- Butter for frying
Method
- Use 1 tablespoon of butter to fry the onion
- Add the mince and brown
- Add 1 tablespoon of butter and fry the zucchini, carrot and beans
- Add the stock powder, salt, pepper, spice mix and garlic
- Stir fry until the mince is cooked
- Place capsicum halves onto a baking tray
- Fill the capsicums with the mince mixture
- Cook for around 20 min until the capsicum has softened
- You may need to cover them with foil after the first 10 min
- To serve, add a spoon of yoghurt, chopped coriander and a sprinkle of lemon rind.
- 1 serve is 2 capsicum halves
