Preparation Time: 10 minutes

Cooking time: 30 min approx..

Preheat oven to 180 degrees C fan forced


  • 4-5 large capsicums cut in half
  • 1 brown onion finely chopped (if you stomach doesn’t upset by them)
  • 1 zucchini finely chopped
  • 2 carrots finely chopped
  • A hand full of green beans finely chopped
  • 2 cloves of garlic
  • 500g minced beef
  • 1 tsp chicken stock (massel)
  • 1 tsp Himalayan crystal salt
  • 1 tablespoon middle eastern spice mix
  • Pepper to taste
  • Rind from 1 lemon
  • Greek yoghurt and coriander to put on top after it has been served
  • Butter for frying


  1. Use 1 tablespoon of butter to fry the onion
  2. Add the mince and brown
  3. Add 1 tablespoon of butter and fry the zucchini, carrot and beans
  4. Add the stock powder, salt, pepper, spice mix and garlic
  5. Stir fry until the mince is cooked
  6. Place capsicum halves onto a baking tray
  7. Fill the capsicums with the mince mixture
  8. Cook for around 20 min until the capsicum has softened
  9. You may need to cover them with foil after the first 10 min
  10. To serve, add a spoon of yoghurt, chopped coriander and a sprinkle of lemon rind.
  11. 1 serve is 2 capsicum halves
