ZUCCHINI PASTA WITH CREAMY PRAWN SAUCE
Ingredients
- A spiralizer and 3 zucchinis
- ½ – ¾ kg of Australian prawns (raw)
- Basil pesto
- ¾ cup of cream
- Salt and pepper to taste
- Butter for frying prawns and zucchini (2 tbls for each)
- 2 tbls butter for cream sauce
- 1 cup grated tasty or mozzarella cheese
- 4 tbs olive oil
Method
- Ensure that prawns are patted dry before cooking
- Heat oil and fry prawns until cooked (don’t over cook them)
- In a small fry pan melt the butter, add the cream and stir until well combined, add grated cheese stir for around 2 min until it begins to thicken.
- Add about 1-2 tbs pesto and stir to combine (this will depend on how strong you want the flavor, try 1 tbs, taste it and add more if need be)
- Add salt and pepper to taste
Zucchini pasta
Using the spiralizer, make the 3 – 4 zucchini into spirals
Heat about 2 tablespoons of butter in a fry pan
Put the zucchini in and coat with butter
Add salt and pepper to taste
Cook for a couple of minutes
Serve zucchini pasta topped with the creamy prawn sauce
