Avo Mayo
Ingredients
1 tbsp apple cider vinegar
2 eggs
1 tsp salt
1 cup extra virgin olive oil
2 tbsp garlic infused olive oil
2 tsp lemon juice
Half an avocado
Method
When making the Avo Mayo, it’s best to use a food processor that has an opening at the top that allows you to pour the oil in while it is on.
Using a food processor, blend the apple cider vinegar, salt and eggs until well combined for 1 minute
Very slowly add the oils and mix for 2 min
Now add the lemon and avo and mix for 1 minute Place in a jar and it should keep for about a week
If it starts to thicken in the jar at the end of the week, add some olive oil and stir it in with a knife
*Avo mayo can be used as a salad dressing or a dip
When it’s in the fridge, if it begins to become a bit too solid at the end of the week, just add about 2 tbs of olive oil and mix it with a knife until it’s well combined.
