Avo Mayo

Ingredients

  • 1 tbsp apple cider vinegar

  • 2 eggs

  • 1 tsp salt

  • 1 cup extra virgin olive oil

  • 2 tbsp garlic infused olive oil

  • 2 tsp lemon juice

  • Half an avocado

Method

When making the Avo Mayo, it’s best to use a food processor that has an opening at the top that allows you to pour the oil in while it is on.

  1. Using a food processor, blend the apple cider vinegar, salt and eggs until well combined for 1 minute

  2. Very slowly add the oils and mix for 2 min

  3. Now add the lemon and avo and mix for 1 minute Place in a jar and it should keep for about a week

  4. If it starts to thicken in the jar at the end of the week, add some olive oil and stir it in with a knife

*Avo mayo can be used as a salad dressing or a dip

When it’s in the fridge, if it begins to become a bit too solid at the end of the week, just add about 2 tbs of olive oil and mix it with a knife until it’s well combined.
