Milk Kefir

Ingredients

  • About 2 tablespoons of kefir grains

  • Organic cow’s milk

  • A jar of about 1L - 1.5L

Method

Start as soon as you get your grains. I can take bout 3 batches for grains to acclimatise to your environment

  1. Put 1-2 tablespoons of kefir grains in a jar (approx.. 1L)

  2. Pour milk into the jar about 2cm from the top

  3. Place lid firmly on the jar

  4. Place the jar on the kitchen bench

  5. Leave your milk kefir to ferment for 48 hours (milk kefir will ferment faster in hot weather) it will separate into curds and whey, this is your indication that it is ready

  6. For a slightly thicker kefir, I place the jar for another day in the fridge

  7. Strain the kefir from the grains into a bowl using a sieve

  8. Push the liquid through firmly, you will not damage the grains

  9. Put the kefir liquid in a bottle in the fridge for you to drink

  10. Place the grains back into a clean jar and repeat the process

  11. You can use the kefir grains indefinitely

  12. It will taste tart if it has fermented well

* If you are lactose intolerant, it’s important to know that milk kefir has little to no lactose because during the fermentation process, all of the lactose is consumed

How much should I have?

I recommend starting with a tablespoon of milk kefir per day (probiotics are powerful) and slowly increasing to one cup per day for a happy, healthy gut.

How to store

When not fermenting, milk kefir grains need to be refrigerated.

  1. Place grains in fresh milk (I recommend organic, full cream)

  2. Store in fridge for up to 2 weeks

Your milk kefir has a used by of around 2 weeks. If it begins to smell like nail polish remover, it’s had its day.

If you are going on holiday and won’t be making kefir, put all of your grains in a jar, cover them with milk and store them in the fridge until you come back. Smell them when you get back to make sure they are a cheesy smell not a nail polish remover smell.

If you treat them well they will last forever.
